Room Temperature

Always check your recipe a few hours before you plan to bake. If the recipe calls for eggs and butter, you will want to set those items out for a while and let them rise to room temperature. You can tell if your butter is ready to be incorporated into your recipe by giving it a touch. If it gives a little, it is room temperature and ready for baking. If you have taken your eggs out at the same time as the butter then you are good to go with those as well. It is important to let these two items come to room temperature because it can affect the finished product of your cake or cookie. For example, a cookie made with butter straight from the fridge will likely be hard to handle and while baking it will not spread to the desired result.

While with other types of cooking is it okay to eyeball your measurements, with baking it is important to do everything to the exact measurements of the recipe, using a kitchen scale or measuring cup. If not your cake may not rise or your cookies may not be soft and gooey as planned. Elements of baking, such as baking powder and baking soda have to be precise. You can sift the flour before or after mixing it with the other dry ingredients.
