One-pot meals have been around for a long time, but casseroles as we know them were popularized during World War II in response to food shortages. Traditional main dishes were expensive and hard to come by. Since pot roast and chicken breasts were hard to get, home cooks had to improvise.

So, they turned to casseroles as a way to use inexpensive cuts of meat, or very little meat at all, and still produce a warm and filling meal.

Generally speaking, casseroles incorporate some kind of liquid base (often, but not always, a cream-based soup), pasta of some type and a protein element, like tuna or ground beef. They couldn't be easier -- all the ingredients are combined, put in a dish and heated through. It's hard to think of an easier home-cooked weeknight meal.
